Add a little bit of zing to your BBQ – Chimichurri sauce.

So yesterday we decided (along with most of the country I reckon) to have a family bbq (as in just us family). I do enjoy bbq food – but once I’ve eaten a burger (and maybe a hot-dog too) I don’t ever feel like eating anything else – I’m usually stuffed full of bread. Don’t get me wrong – I love bread – but I think that if you’re going to go to the slog of setting up the bbq, you want the experience to last more than that of ‘just’ eating a burger. What I mean is – I love “bbq grazing’!! You know – nibbling bits and bobs here and there with salads, breads and dips to lovingly accompany the main event (the burgers and hot dogs etc)! A little bit of colour and a big hit of taste. Peppery oils and zingy vinegars – add such a lovely taste to any dish, they transform standard bbq’s….in my very humble opinion.

So I’m sharing with you a recipe for Chimichurri sauce that we used to smother some beautiful steaks on our bbq. What a revelation this sauce is….and so easy to make, you’ve got to give it a try if you haven’t already. We had it over the steak – but it was also nice to dunk a chunk of sourdough bread in too! The parsley and vinegar make it so fresh – it really livened up the steak. You can add chilli or not – it’s up to you……obvs we did!

I’d also like to share with you that despite the forecast of England being hotter than Ibiza – we ended up inside and even contemplated putting a log on the burner…..just saying! 😩

The recipe I used was from from cafedelites.com an authentic Argentinian recipe. For the method – you can either use a food processor or bash up in a pestle and mortar.

  • 1/2 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 cup finely chopped parsley
  • 3-4 cloves garlic , finely chopped or minced
  • 2 small red chilies , or 1 red chili, deseeded and finely chopped (about 1 tablespoon finely chopped chili)
  • 3/4 teaspoon dried oregano
  • 1 level teaspoon coarse salt
  • pepper , to taste (about 1/2 teaspoon)
