Wednesday Night Chilli Con Carne

Tonight’s recipe is a chilli con carne recipe from BBC Good Food – always a good reference point for recipes and you can see how difficult or easy the recipes are to cook and then decide which one to use. This recipe is easy 😊😊😊 (but really really tasty!!)

By the way – I know this is the second night that we’re using beef mince – pure coincidence. (Although we did get a deal from our local butcher on mince….just saying 😂)

BIG chilli fans in our house (well – not the kids….yet!). The beauty of making one-pot dishes like this chilli is that you can add or substitute ingredients depending on your own taste. In tonight’s dish, we’re using Mahi scorpion pepper and passion hot pepper sauce (made with Trinidad scorpion peppers!!) It’s got quite a kick and you only need about a tablespoon (for newbies to chilli sauces, maybe take it steady and add little by little 😊) The nice thing about this sauce is that even though it’s super hot – there is still a great flavour and sweetness. It really is good. Also, another handy hint for tinned tomatoes is Lidl’s fantastic Deluxe Italian cherry tomatoes. They’re absolutely brilliant and useful for so many recipes… plus – they’re half the price of other supermarkets. Boom!

Anyway, here’s the recipe.

  • 1 large onion
  • 1 red pepper
  • 2 garlic cloves
  • 1 tbsp oil
  • 1 heaped tsp hot chilli powder (or 1 level tbsp if you only have mild)
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 500g lean minced beef
  • 1 beef stock cube
  • 400g can chopped tomatoes
  • ½ tsp dried marjoram
  • 1 tsp sugar (or add a thumbnail-sized piece of dark chocolate along with the beans instead, see tip)
  • 2 tbsp tomato purée
  • 410g can red kidney beans
  • plain boiled long grain rice, to serve
  • soured cream, to serve (not essential)

For the method – use the BBC good food link listed above. It really is straightforward and the perfect boost for the middle of the week which can always be a bit …meh, if you know what I mean. Might be nice to have an ice cold beer with it too. Not essential, but always nice….especially on a Wednesday! 😳
